INGREDIENTS:

1 head of garlic

1 head of cauliflower (cut into florets)

1 Tbsp olive oil

1 tsp lemon juice

Salt and pepper to taste

DIRECTIONS:

For the Roasted Garlic

  1. Preheat the oven to 400°F (200°C).

  2. Cut parchment paper into squares slightly larger than the whole garlic head.

  3. Peel away any loose skin from the garlic head, keeping it intact. Slice about ¼ inch off the top of the bulb to expose the cloves. Wrap the paper around the garlic and twist the top to secure it.

  4. Place the wrapped garlic on a sheet pan and roast in the oven for 30 to 40 minutes, or until the cloves are soft and lightly browned.

  5. Remove from the oven and let it cool enough to handle.

For the Cauliflower Mash

  1. In a large pot, steam the cauliflower florets until very tender.

  2. Transfer the steamed cauliflower to a food processor or high-speed blender (I used a hand blender). Add olive oil, cloves from the roasted garlic, lemon juice, salt, and pepper. Blend until the mixture reaches a smooth, pureed consistency.

  3. Try the mash and adjust the seasoning as needed. Enjoy!

Notes:

*Add butter or nutritional yeast when blending for more flavour.

*Add 1 tsp fresh, minced thyme (1/2 tsp ground) and/or 1 tsp fresh, minced rosemary (1/2 tsp ground) to cauliflower before cooking.
